Update Docker instructions

Alf Eaton requested to merge alf/ink-api:patch-2 into master

This updates the Docker instructions to use the scripts in the bin folder (on the host and inside the container) rather than running docker-compose up directly.

I believe that these instructions represent how the Docker cluster is intended to be run, but please correct anything I've misunderstood.
