Spaces are not being written correctly for text fields entered by user in UI and bad characters are being introduced

Expected behaviour
Text fields entered by users in chapter-processed book and collection metadata should be written into book metadata XML so that they display faithfully on Bookshelf website(s).
Current behaviour
In this context, spaces are disappearing and special characters / entities are being added where they should not be.
Steps to reproduce

- Open book metadata for those fields
- Compare those fields to TOC preview

QA Steps
- Create a word complete book
- Fill the metadata for abstract and copyright license same as in the example book above.
- Sent the book for conversion
- When the preview is generated, check that there are not & characters at the abstract and also for the copyright the spaces between words appear correctly (which was an issue when we had two styled words next to each other).
